Feeling Sad? Struggling with Seasonal Affective Disorder? Try this Delicious Carrot Tarragon Soup!

We’ve all been there. Bad day, bad relationship, or even the doldrums of winter can sometimes have us feeling so low that all we want to do is eat and sleep, which in turn makes us feel worse.

This is particularly true if you struggle with Seasonal Affective Disorder (SAD). SAD happens during the winter months and is the result of the lack of sunlight we experience during the shorter days of winter. Because light helps to boost serotonin production in the brain, helping us feel vital and alive, the diminishment of this powerful neurotransmitter due to lack of sunlight can be devastating to those who are prone to it.

But fear not! In today’s video I am going to share with you how to make a delicious, nutritious and serotonin boosting soup! It is one of my favorites, combining the earthy flavors of carrot and tarragon in a yummy broth that will have you feeling better after the first spoonful.

Creamy Carrot Tarragon Soup

Ingredients

  • 1 Tbsp Ghee (clarified butter)
  • 1 medium yellow onion, chopped
  • 2 cloves of garlic, split in half
  • 4 cups chopped carrots
  • 1 bay leaf
  • 2 to 3 tbsp fresh tarragon
  • 12 cups chicken or vegetable broth
  • ½ cup plain almond milk

Directions

Sautee onion and garlic in ghee till onion softens. Add carrots and continue to sautee for another 5 minutes. Add broth, tarragon, bay leaf, pinch of salt, almond milk and bring to a simmer. Simmer until veggies are soft enough to blend. Once cool enough, remove the solids in batches and put in a blender. Blend until smooth and then place back in pot with liquids. Adjust salt for flavor. Heat to serve.
