Hot Mama! A Salad to Quench that Menopausal Heat!

Good morning everyone and happy Monday!

Today’s video is very specifically for all my sisters out there going through that major life change, Menopause! If you’re struggling with the mood swing and hot flashes that the loss of estrogen brings on, then you’ll want to tune into today’s video.

So many women approach this time of life with dread, and sure it can be uncomfortable. In addition to the hot flashes and mood swings, you have to navigate sudden belly fat and sleepless nights, loss of libido in some instances and other challenges. But there are some wonderful opportunities that come with midlife and over the coming months, I’ll be sharing more with you about this life changing time and how to look, feel and live the best possible way so that you can thrive as you enter phase two of your life journey….

In the meantime, today I am offering delicious relief from some of your discomfort. This salad recipe is easy to make, delicious and a nice way to offset some of your symptoms. Check it out and see what you think.

Cooling Chick Pea and Edamame Salad!

Ingredients

  • ½ cup frozen edamame (unshelled), cooked to package instructions
  • ½ cup frozen peas, thawed in warm water
  • 1 can chick peas, rinsed and drained
  • 1 cup cook black Japonica rice (or any cooked grain)
  • ¼ red onion, finely diced
  • Juice of 1 lemon
  • Olive oil
  • Fresh mint and basil, torn/chopped…about ¼ to 1/3 cup total, depending on taste
  • preference
  • Salt and pepper
  • Optional additional Ingredients if desired: chopped cucumber, chopped tomatoes, olives

Combine ingredients in a bowl. Marinate in fridge for at least an hour before serving. Enjoy!
