An Delicious Meal in Minutes: Marinated Chickpeas and Spinach

 

Hey everyone and Happy Monday!

As I write this I am homebound as we are getting quite a bit of snow here in NYC, which gives me an opportunity to cook some delicious food and of course, get some work done on the book!

Writing a book is not an easy undertaking, I’ll tell you, but I can also see that with each day it gets a little easier and my determination for it grows. Because it can be laborious, I am keeping the cooking for today simple. REAL simple. Like, it is taking me 10 minutes to prepare my lunch. But don’t let the rapidity of the preparation fool you. Just because it is quick food, doesn’t mean it is fast food. In fact, what I made for lunch is a healthy, balanced dish that includes chickpeas (a great vegetarian source of protein), as well as mountains of sautéed spinach, allowing me to get several servings of greens in one small bowl.

I got this recipe from a client of mine several years ago (Thank you Sukey!) and I make it often. It makes a great side dish if you are serving fish or chicken, or it can even be had on it’s own, which is how I tend to enjoy it. In fact, I often bring to work so that I can have a delicious balanced lunch midday.

Eating healthfully doesn’t have to be a long, arduous process. In fact, it can be quite simple. And whenever possible, you should keep it simple. I know for me, little that I make takes more than a half hour. If it took longer there would be no way to fit in all the rest, like making time for the book. I hope you are seeing through these videos that anyone can be healthy with just a few ideas, and a little motivation to carry it out. Investing 30 minutes of your time to prepare fresh, healthy food will actually deliver more energy and stamina to make your time expand, allowing you greater vitality for a wonderful life.

Marinated Chick Peas and Sautéed Spinach

Ingredients

  • 1/2 Can Chickpeas (Garbanzo Beans)
  • 3-4 (or more) Cups of Spinach
  • 1 Tbsp Lemon Juice
  • 1 Clove Chopped Garlic (Or more if you prefer)
  • Olive oil
  • Himalayan Salt
  • Pepper

Directions

Rinse the chickpeas well and place in bowl. Drizzle with olive oil (a couple of tablespoons will be enough), and add the lemon juice, salt and pepper to taste, and mix well. Set aside to marinate. Next, sautée the chopped garlic in a pan with some olive oil, and add the spinach. Be generous with the spinach, since it’s so good for you, but cooks down to so little. Sautée the spinach just long enough so that it wilts, and then add it to the marinated chickpeas and mix well. The combination of garlic and lemon is delicious. Enjoy!
