Refreshing Summer Gazpacho

I have an amazing summer recipe for you today that you can begin to include in your repertoire of healthy dishes to help you have a wonderfully healthy summer! Chilled Gazpacho!

I make this weekly during the warmer months as it keeps me satisfied, healthy and full without a lot of calories or a lot of fuss. Loaded with antioxidants and health promoting nutrients, this is an easy go-to recipe during a busy week when you’re not much into cooking.

Just returning from a trip abroad, I have these exact ingredients in my refrigerator to whip up some delicious gazpacho to help me get back on track tomorrow, with my healthy routine.

Gazpacho Recipe

Gazpacho Ingredients

Summer Gazpacho

Ingredients

Serves 4

  • 5 Large tomatoes
  • Garlic cloves (2-5 depending on taste preference)
  • Jalepeño pepper (leave a few seeds in if you prefer it a little spicy, otherwise remove all seeds)
  • One large Cucumber
  • A whole lime (peeled)
  • 1 medium-sized red onion
  • 3 Tbsp. olive oil
  • Himalaya salt to taste
  • 1 large orange pepper
  • 1 cup cilantro
  • 1 cup basil
  • Water to thin out the soup if necessary

Directions

Combine all ingredients in the blender, and blend until the desired consistency is achieved. Chill in the refrigerator for 20 minutes—serve and enjoy!
