Happy Monday Everyone!
I hope you are all well and enjoying the festive atmosphere that leads up to the various holidays at this time of year.
Today’s video focuses on a healthy version of a very popular snack that is typically nutrient-deficient and laden with salt and grease. In fact, it’s an alternative to one of the most addictive foods out there. Inevitably there are occasions when we all crave an easy snack to munch on, so the more healthy recipes we have in our repertoire, the better. It does take a little preparation, but it’s extremely easy, and rewards with a truly delicious snack option!
I encourage you to give this recipe a go. There are several ways for varying the flavor, so let me know if you come up with a favorite. As always I welcome your comments and feedback.
I’m currently enjoying a short hiking expedition in Northern England and Scotland. I’m in my absolute element, but also cannot wait to return to New York City and it’s wonderful holiday spirit.
Have a wonderful week!

Ingredients
- Yams / Sweet Potatoes (Choose colorful orange and red options for beta-carotene)
- Olive Oil
- Himalayan Salt
- Thyme (Cinnamon or Rosemary also work well)
Directions
Slice the potatoes evenly into chips—not too thin. Toss in olive oil (only a very light coating or they will be too greasy and become soggy). Sprinkle both sides with your choice of seasoning. My favorite is Himalayan salt and thyme. Lay on a baking sheet and bake in oven at 325 degrees for 30 minutes, checking every 10 minutes or so to turn them and re-distribute the chips on the tray so that they bake evenly. Enjoy this homemade snack (moderation is still key) knowing the nutritional benefits far outweigh traditional store-bought potato chips, and are delicious to boot!
