Deliciously Healthy Salad Pizza!

In today’s video I am going to show you how to make a delicious and healthy pizza that is easy to assemble, high in antioxidants and fiber and will absolutely blow away your palate. Ingredients

Serves 1

  • 1 Udi’s Gluten free pizza crust
  • 2 -3 tbsp sundried tomato pesto
  • 1/2 cup fresh baby spinach
  • 1/2 cup arugula
  • Few slices of red onion, sliced thin
  • 5 Kalamata olives, pitted and chopped
  • 1 tablespoon pine nuts
  • 2 teaspoons olive oil
  • Juice of ½ lemon

Directions

  • Spread the pesto on the pizza crust leaving a ½ inch border. Bake according to package instructions.
  • While crust is baking, assemble your salad: Combine all the ingredients and toss well.
  • When crust is finished baking, remove from oven. Allow to cool for only a minute or so, and then place the salad over the crust. Enjoy!

    Your last two videos were very timely. I make pizza every week but was getting tired
    of just using whole canned tomatoes cut up for the sauce. So today I am making the
    sun dried pesto sauce topped with spinach, mushrooms, and a little mozzarella. I
    always use lots of veggies for toppings-I just drizzle the whole pizza with olive oil and dried or fresh herbs.
    The pesto was delicious, quite rich. We had a salad of mixed greens including arugula, red lettuce, and our first chard from the garden-so it was a great dinner!

    You had told us about this salad without going into detail, and I must say it did not sound nearly as appetizing as it looks in your video.
    As a matter of fact I think that we are going to try it tonight! It looks delicious!

    Barbara, I use a tomato base that has no sugar, and then mushrooms and goats cheese as my toppings. I haven’t made pizza at home in many years though. This inspires me. Especially the rice based dough which i have never heard of before!!

    I have to say that I was not too excited when you first gave me this recipe (a while Back) but I was in fact stunned at how delicious it was!! I think it has to do with the lemon used as the dressing on the salad (instead of vinegar which would be too overpowering) combined with that delicious tomato pesto. This pizza is sooo good!
