Homemade Oat Bars

Here is a great recipe for homemade oat bars – perfected over time by yours truly. These oat bars are a great snack to keep handy at home or at the office for times when you need to satiate a sweet tooth craving, and want to avoid caving into the desire to demolish a prepackaged cookie laden with sugar and preservatives. (Or box of cookies, perhaps?)

Ingredients

  • 2 2/3 cup raw oats
  • 1/4 cup flax seeds (ground seeds)
  • ¼ cup hemp seeds
  • 1 cup canned pumpkin (plain, not pie mix)
  • 2 very ripe bananas, mashed
  • 2/3 cup total chopped pecans and walnuts
  • ½ tbsp cinnamon powder (or more if desired)
  • 2 tbsp agave nectar or honey or maple syrup
  • one egg

Directions

Combine all dry ingredients and mix well. Combine pumpkin mix, banana, egg, and sweetener and mix well. Add dry ingredients to wet ones and mix well until blended. Spread out on brownie tray and bake 15 to 20 minutes on a 350’ oven.
