Video: 3 Bean Salad, A Food to Improve your Mood!

A nutritious recipe that’s easy to make, with ingredients that will improve your mood. Beans and corn will help increase your serotonin levels – a chemical responsible for making you feel happy! Other ingredients work in complimentary ways to improve and stabilize brain function and help maintain a healthy heart!

Three Bean Salad

Ingredients

  • 1/2 Minced medium Red Pepper
  • 1 Minced Carrot
  • 1/2 Minced Yellow Squash
  • 15oz frozen corn, defrosted and drained
  • 3 15oz cans of beans (Black, Kidney & Garbanzo)
  • 1/2 Cup chopped Scallions
  • 1/2 Cup of finely minced Red Onion
  • 2 Tbsp each chopped fresh Basil, oregano and Parsley
  • 1/2 Cup Red Wine Vinegar
  • 3/4 Cup Olive Oil
  • 3 Cloves minced Garlic
  • Juice from 1/2 a large Lemon
  • Salt & Pepper to taste

Directions

Mix all ingredients together and refrigerate for two or more hours.  Serve as an appetizer with tortilla chips or as a side dish to grilled fish.

Ms. Mendez — I just came across your site looking for healthy recipes for the Superbowl on Sunday. We’re having a fit challenge at my local karate do-jhong, which started out w/an herbal cleanse, helping me to lose several pounds in the first week. But the challenge is more about changing our diets long-term, so I’ve been taking the time to make those small changes you talked about in your Monday video on liquid nutrition. I came across this recipe, which is going to be a big hit on Sunday as well as some of your other tips. Your videos are interesting & informative, and I appreciate your advice! Thank you!

I LOVE this recipe! Best part…my kids loved it! It’s a variation of one I make with tomatoes and cilantro – and never thought to sneak in the garbanzo and sqaush. They ate it right up!! Miss you
