Sprouts have a very high nutritional value. The reason we sprout certain nuts and seeds, is to remove the enzyme inhibitors that are found naturally in many of these foods, therefore allowing them be better digested and allowing the nutrients to be better absorbed by the body. Sprouting also maximizes the nutritional value of a food, so it enhances the vitamin and mineral content and the enzyme activity.
